Old Fashioned Bacon & Cornbread Dressing

This recipe for Old Fashioned Bacon & Cornbread Dressing is fast and easy. I’ve been polishing this recipe for about 20 years. When I have fresh mushrooms, I add them. Try a different cream of soup – maybe one that features your favorite flavors, like roasted cream of mushroom soup. I find this recipe easy to make and serve any time of the year.
What you will need:
- 1 pan of cooked cornbread
- 6 to 8 strips of bacon
- 1 cup of chopped onion
- ½ cup of chopped celery
- 1 can cream of chicken & mushroom soup
- ½ teaspoon basil
- ½ teaspoon oregano
- Pinch of Rosemary
- ½ teaspoon coarse ground Black Pepper
- ¾ cup chicken broth or stock

Start by making a pan of cornbread - nothing fancy - you can either make it from scratch or use a box mix like Jiffy Brand Cornbread mix. Let the cornbread cool down before breaking it up with a fork. Set aside for now.
Fry about 6 to 8 slices of bacon. Do not dispose of the bacon grease when you are done. We are going to use it next!
In the same pan you fried the bacon in - add 1 cup of chopped onion and 1/2 cup of chopped celery. Sauté on medium low heat until the onion and celery start to brown up a little. Turn off the flame and set aside.
Now crumble up 3/4's of the cornbread into a large mixing bowl. To that add the sautéed onion and celery - AND that wonderful flavorful bacon grease! Yes - add that bacon grease right in there! Add the remaining cornbread.
In the same bowl – add one can of Cream of Chicken Soup or Cream of Mushroom soup. One Egg – beaten. And about 6 slices of bacon crumbled. Hold back two slices of bacon for later. Add the seasonings: 1/2 teaspoon of basil, 1/2 teaspoon of oregano, a pinch of rosemary and 1/2 teaspoon of black pepper - coarse ground. Mix all of these ingredients a couple of trips around the bowl. Now add about 3/4 cup of chicken stock or broth. And then stir some more. Your looking for a moist soft consistency, not a drippy batter. But if you think your dressing is still too dry - add more chicken stock.
Lightly grease a 9x12 Pyrex pan. Pour the dressing into your pan and press down to fill the corners. Now crumble up the remaining 2 slices of bacon on top. Bake your dressing in a 350 degree oven for about 40 minutes or until the edges are golden brown.
